Your S.A.L.T. experience begins with a drive to the first stop, La Boqueria Food market, Barcelona's most emblematic Modernist market dating from the late 19th century. This is a great opportunity to admire a must-see during a trip in Barcelona with a wide variety of fresh fruit, vegetables, meats, olives and more.


After the short tour, you walk to the Kitchen where Chef Xavi Morón invites guests on a journey of endless imagination across the centuries on a meal of epic proportions and freewheeling creativity, divided into 7 historical periods: "The Iberians, Greeks & Romans"; "Jews & Muslims"; "The Gothic Age"; "The High Renaissance"; "Baroque & Roll"; "The Belle Époque" and "The 21st Century."


7 Course Lunch

While each of the 7 courses gives an accurate portrayal of the cuisine of its era - the first course places us at roughly 400 BC with a "triad ritual of homemade fig & rosemary bread; extra virgin olive oil & natural red wine" - Xavi allows himself a degree of artistic license in dreaming up unexpected pairings and modern day twists. The third course, set in Barcelona's Gothic Age, features lamb shoulder long cooked in clay, with parsnips, mushroom puree, and garlic flowers, served with green tea, roses and artisan kombucha. Xavi's enormous open kitchen space - the former atelier of contemporary Catalan artist Antoni Tàpies - is a temple of creativity in the heart of El Raval. A sensorial experience - and the most deliciously memorable history class.
