Invented and perfected in Genoa, pesto sauce captures the fresh, shimmering warmth of the Ligurian sun as if by magic, and remains one of the most popular pasta sauces in Italy. On this delicious excursion, you will master the technique of crafting pesto yourself. Then savor your creation, slathered on Genovese focaccia and accompanied by a glass of local white wine. All within the handsome walls of a historic palazzo in the heart of the city.

Your gastro-adventure begins with a short coach transfer from the port to Via Garibaldi, Genoa’s "Strada Nuova" (New Street) dating back to the mid-16th century and lined with enough beautiful palaces to warrant UNESCO designation. You will walk to one of these noble buildings and ascend to the second floor for your private chef-led demonstration of how to make traditional Pesto alla Genovese. The recipe commands DOP (Protected Designation of Origin) status, meaning that only sauces made in a specific way and with authentic ingredients can be called Pesto alla Genovese in Italy and the EU.

Prepare to get your hands personally involved as you learn how to prepare the sauce using a mortar and pestle and the freshest ingredients while watching your chef prepare it. One or two volunteers may join the chef to make the experience even more interactive. Afterward, the reward for your efforts: enjoy the pesto with plump, airy Genovese focaccia and a glass of regional white wine. And after that, enjoy another hour or so of free time to explore here in the city center before meeting your guide at the preset time and place for the coach return to the port.

Please note: This tour involves a moderate amount of walking for approximately 0.75 miles (about 1,200 meters) at times over cobblestone surfaces, with two staircases to reach the second noble floor of the historic palace where the class is held. A few additional steps are required to enter the palace. This tour is not suitable for guests with limited mobility or guests who utilise a wheelchair. Lightweight, comfortable clothing with flat, closed-toe walking shoes and sun protection are recommended.
