Getsemani
Getsemani is a colonial quarter in Cartagena de Indias, inhabited by artisans since the beginning of the Colony, with special participation in the Independence of the city in 1811 by providing the Lancers of Getsemani, the initial armed force of the independence movement. It is nowadays a picturesque neighborhood with colorful houses, people chatting on the sidewalks, music, street art and bohemian style. In one of the emblematic streets of Getsemani is located the restaurant where you will enjoy the exclusive menu created for S.A.L.T
Once in the restaurant, the chefs will meet and greet them and explain about the menu, the dishes and pairings details.
Your Hosts
The awarded Colombian chefs Jaime and Sebastian focuses on local products and culinary traditions from the Colombian Caribbean region. After learning and practicing beside the most repute Colombian chefs, they dedicated to travel throughout the territory for over two and a half years, rediscovering, researching and documenting products, techniques and recipes of the Caribbean gastronomy to promote the gastronomic culture and identity of this impressive region. They became a reference for all items related to contemporary Colombian Caribbean cuisine, working directly with the sources of the best local products. Their project focuses on improving the lives of many farmers, artisans, micro-producers and helping biodiversity.
Ten Courses Menu with Parings
This menu, designed to show the treasures hidden by Colombian Caribbean cuisine through its products, ancestral recipes and traditional techniques, from a contemporary point of view, with a twist of creative pairings using artesian beers, fermented drinks, cocktails and wines.
-Welcome Cocktail: Sorrel, a traditional Caribbean island infusion of hibiscus flowers, cinnamon, star anise, and Colombian rum.
-Octopus tartar, coconut mayonnaise and "patacón" (crispy green plantain). Pairing: Mama Africa, fat-washing of Gin and coconut oil, and fresh coconut water.
-"Mote de Queso": (Yam soup) foam and criollo cheese crumble. Pairing: Homemade sesame horchata.
-Sweet peppers filled with rabbit confit and palm wine sauce. Pairing: Montepulcino D'Abruzzo, Italy.
-Fish "en cabrito" (wrapped in bijao leaves and roasted) and vegetable emulsion. Pairing: Wine Torrontés, Colome, Argentina.
-Casava bun "Carimañola" stuffed with stewed river fish. Pairing: Wine Bila Haut rose, France.
-Sundried shrimps rice "la Guajira" style in two ways. Pairing: Nevada Happy Nebbi, Caribbean craft beer.
-Smoked farm chicken "Sancocho" (traditional soup). Pairing: Wine malbec, Catena Zapata, Argentina.
-Watermelon sorbet with herb textures. Pairing: Canella Prosecco, Italy.
-Creamy pineapple, May flowers and corn "chicha". Pairing: "Chirrinchi" liquor from la Guajira, Colombia.
-Traditional Caribbean sweets. Pairing: Colombian Coffee.
At the conclusion of your S.A.L.T. Experience, re-board your coach for a 15 min drive to reach the the port.
