Islay and whisky have a long history, they go together like a fine single malt and a roaring log fire. Back in the 14^th century, the Irish monks were the first to spot the island’s potential for distilling the water of life. With its fertile lands capable of supplying lots of barley, pure slightly peat-infused waters, and huge amounts of fuel in the form of peat, the conditions were ideal. The local people then propelled it with ever greater speed, setting up their own stills.
